– 1 eggplant, cut into small chunks
– 1 potato, cut into small chunks
– 1 green bell pepper, cut into small chunks
– 1.5 tablespoons oil
– 2 tablespoons soy sauce
Heat the oil in a wok until it smokes slightly. Put in the eggplant and stir fry until half cooked. Put in the potato and green pepper. Add soy sauce and stir fry until all vegetables are fully cooked. Add salt to taste if the flavor is not enough, and serve.
