How to Make Steamed Dumplings (蒸饺)

In addition to cooking Chinese dumplings in boiled water, there is another method that I will show in this Chinese Steamed Dumplings recipe. Note that steamed dumplings can be a bit bigger than regular dumplings, so if you are able to find larger dumpling wrappers, you can use them for this recipe.

Ingredients:

– 1/2 pound ground pork, beef, lamb or shrimp
– 1 stalk scallion, minced
– 1 tablespoon Shaoxing wine/rice wine
– 1 tablespoon soy sauce
– 1 inch piece ginger, minced
– Dumpling wrappers

Preparation:

In a bowl, mix all ingredients except the dumpling wrappers together well. Place a spoonful of filling in the center of a dumpling wrapper. Fold the dumpling wrapper in half, enclosing the filling and use a little water to make the edges stick together. Continue making dumplings until you have enough. Lay out the dumplings in a steamer (line with cabbage leaves at the bottom if desired), and steam for 10-15 minutes. Serve with black rice vinegar as a dipping sauce.
