Clam Soup Recipe (蛤蜊汤)

Soup is an important part of Chinese food and culture, and is especially important in southern Chinese provinces. The local Chinese people believe that drinking soup aids digestion, speeds up metabolism, helps you lose weight, makes you feel more relaxed, prevents illnesses, and will improve your health in general.

Different from the clam chowder recipe that you might find in western countries, this Asian clam soup recipe is not as thick and is hands-down one of the easiest Chinese recipes ever. It is very important that you use ginger and wine in the clam soup in order to remove the smell that raw seafood contains.

Clam Soup Recipe

Ingredients:

– 1 2-inch piece fresh ginger, peeled and cut into very thin strips
– 15-20 fresh clams, thoroughly washed
– 1 tablespoon Chinese rice wine or white wine
– Salt and white pepper to taste

Method:

Bring a pot of water to a boil and add the ginger and clams. Cover the pot and cook on medium or low heat until all the clams open up. If the pot starts to dry up, add some more water while cooking, and bring to a boil again. Add the wine, and salt and pepper to taste. Serve hot.
