Braised Pork is one of the most famous dishes in Chinese cooking.
Ingredients:
- 1 pound boneless pork belly with skin, cut into bite-size pieces
- 1 tablespoon cooking oil
- 4 slices of unpeeled ginger
- 1 tablespoon Shaoxing wine
- 4 star anise
- 1 tablespoon soy sauce
- Salt to taste
Preparation:
Heat up the oil in a wok and add the ginger. Stir-fry until its aroma appears. Add the pork and stir-fry until it is about half-cooked. Add the Shaoxing wine, star anise, soy sauce, and a dash of salt. Mix the ingredients, then transfer to a clay pot or pan with a lid. Bring to a boil, then cover and simmer over a low flame for at least 90 minutes. Add hot water if necessary to keep the pot from boiling dry. Adjust the taste if necessary, and serve.
