Braised Duck Recipe (卤鸭)

Easy recipes detailing how to cook duck are rare, and whole duck recipes are even harder to find. Cooking duck is usually a complicated process, but today I will share an easy Chinese recipe known as Braised Duck.

Braised Duck Recipe

Ingredients:

– 3 tablespoons salt
– 1 whole duck, rinsed and patted dry
– 2 tablespoons soy sauce
– 1-inch piece ginger, sliced
– 6 pieces star anise
– 1 teaspoon black peppercorns

Method:

Remove any excess fat from the duck, and rub the salt evenly over the duck. In a large pot, add the soy sauce, ginger, star anise, peppercorns, and enough water to submerge the entire duck. Bring to a boil, then reduce the heat to medium-low. Place the duck in the pot. Cover and cook for about 60 minutes, or until the meat becomes tender, flipping the duck over after about 30 minutes. Add more water if necessary to keep the duck submerged. When finished, cut the duck into thin pieces, and serve.
